Wrapped Corn Dogs

INGREDIENTS:

1 Tbsp. active dry yeast
1 Tbsp. sugar
1 cup warm water
1/4 cup oil
1/2 cup cornmeal
1/2 tsp. salt
2 cups all purpose flour, plus additional
10 frankfurters

DIRECTIONS:

Combine first 4 ingredients in a bowl. Let yeast dissolve. Add remaining ingredients, except frankfurters. Knead 5 minutes, using additional flour if necessary. Place in a greased bowl. Turn. Let rise until doubled in bulk. Preheat oven to temperature 350A?A?F. Punch dough down. Roll into a 10×16 inch rectangle. Cut with a pizza cutter into 10 equal sized rectangles. Wrap around hot dogs, pinching edges together. Bake 20 minutes until golden.

Banana Bread

INGREDIENTS:

1 1/2 c. melted butter
4 eggs, room temp.
1/2 tsp. almond extract
1 3/4 c. brown sugar or 1 1/2 c. honey
2 1/2 tsp. vanilla extract
1 orange rind, grated

DIRECTIONS:

Beat in large bowl, beginning with sugar or honey and butter, add eggs one at a time. Add remaining ingredients, and beat until light in color. Sift the following together: 1 tsp. salt 3 tsp. baking powder 2 tsp. cinnamon 2 c. well mashed banana soaked in 1 c. strong coffee 2 c. white flour 1/2 tsp. baking soda 1/2 tsp. nutmeg
Add flour mixture and banana alternately to batter mixture, beginning and ending with flour. Add nuts and raisins if desired.

Generously butter 2 loaf pans and sprinkle with sesame seeds (they’ll stick to the batter). Divide batter and bake at 350 degrees for 40-50 minutes. Makes two loaves. Cool 10 minutes in the pan before removing. Makes the moist and delicious banana bread I’ve ever had.

Garlic Bread Hearty

1 tb Dry yeast
1 c Warm water
3 tb Vegetable oil
1 ts Salt
1/4 ts Sugar
3 c White flour
12 Garlic cloves; pressed

DIRECTIONS:

In a deep bowl, dissolve the yeast in water. Add oil, salt & sugar. Beat in half the flour & the pressed garlic. Add the rest of the flour slowly, working it in as you go. Using your fingers, squeeze the dough together.

Bang the dough down hard on the kneading board. Form into an oval & place on an oiled pan. Let rise for a while in a warm place.

Preheat oven to 375F & bake for 45 to 55 minutes.
