Norwegian Christmas Bread
INGREDIENTS:
3 c. flour
4 tbsp. baking powder
1/2 pt. milk and water
1/2 tsp. nutmeg
1 c. dried fruit (raisins, prunes)
2 c. sugar
2 c. boiled sweet potatoes
1 tsp. cinnamon
1 tsp. salt
1/4 c. butter
1 c. grated coconut
DIRECTIONS:
Mash potatoes, add sugar, butter and beat well. Cool. Sift flour and baking powder. Add salt and chopped raisins. Add flour mixture to the potato mixture folding. Add enough milk to make a firm dough. Shape into loaves and bake in a greased loaf pan for 45 minutes at 350 degrees.
