Pumpkin-raisin Bread

INGREDIENTS:

1/3 c Vegetable oil
2 tb Sugar
2 Eggs
3/4 c Cooked or canned pumpkin
1 c Unbleached enriched wt.flour
1 c Whole wheat flour
1 tb Baking powder
1/2 ts Baking soda
1/4 ts Salt
1 ts Ground cinnamon
1/2 c Raisins
1/4 c Lowfat milk or orange juice

DIRECTIONS:

Beat together the oil, sugar, eggs, and pumpkin until light and fluffy. Combine the flours, baking powder, baking soda, salt, cinnamon and raisins in a bowl. Stir into the creamed mixture with the milk or orange juice.

Pour into an oiled 9 x 5 inch loaf pan. Bake at 350 F for 40 to 45 minutes.

Pumpkin-banana-walnut Bread

INGREDIENTS:

2 c Wholewheat pastry flour
2 ts Baking powder
1 ts Cinnamon
1/2 ts Nutmeg
1/4 ts Salt
2 Bananas, ripe & mashed
1 c Pumpkin, cooked & pureed
1/4 c Maple syrup
1/4 c Oil
1 ts Vanilla
1/2 c Walnuts, chopped

DIRECTIONS:

Preheat oven to 350F. Lightly oil a loaf pan & set aside.

Sift together flour, baking powder, cinnamon, nutmeg & salt. Blend the remaining ingredients, except the walnuts, until smooth. Stir wet ingredients into dry ingredients until just combined. Fold in the walnuts.

Spoon batter into prepared loaf pan. Bake until a knife inserted into the centre comes out clean, approximately 1 hour. Cool on a wire rack before slicing.

Pumpkin Winter Squash Bread

INGREDIENTS:

1 c ;water
3/4 c Squash, winter; cooked mashed
2 2/3 tb Oil, vegetable
2 2/3 tb Honey
2 ts ;salt
1 1/3 ts Cinnamon
2/3 ts Allspice
1/3 ts Nutmeg
1/3 ts Cloves, ground
2/3 c Flour, whole wheat
3 1/3 c Flour, bread
2 1/2 ts Yeast

DIRECTIONS:

Add ingredients to ABM in order listed. Select cycle and bake.
