Apple – Orange Nut Bread

INGREDIENTS:

1 lg. orange
1/2 c. seedless raisins
2 c. canned apple sauce
2 c. sifted all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
1 c. sugar
3/4 tsp. salt
3/4 c. chopped nuts
1 egg
3 tbsp. melted butter

DIRECTIONS:

Squeeze juice from orange. Using medium blade, put rind through food chopper with raisins. Add orange juice, rind and raisins to apple sauce. Sift all dry ingredients. Add apple sauce mixture and nuts. Mix thoroughly.
Beat egg. Add with melted butter, stirring until thoroughly blended. Pour into greased loaf pan, 8 1/2 x 4 1/2 x 2 1/2 inches. Bake in moderate oven 350 degrees for 70-80 minutes. Remove from pan. Cool on wire rack. The bread will slice better if allowed to stand 12 hours.

Orange Nut Bread

INGREDIENTS:

Juice of 1 orange
Boiling water
1 c. dates and orange rind
1 tsp. soda
1 c. sugar
2 tbsp. soft shortening
1 tsp. vanilla
1 egg, beaten
2 c. flour
1/4 tsp. salt
1 tsp. baking powder
1/2 c. chopped nuts

DIRECTIONS;

Squeeze orange and add enough boiling water to make 1 cup. Put orange rind through food chopper; add dates to make 1 cup. Place these 2 mixtures in bowl and add soda, salt, sugar, shortening, and vanilla. Add egg, then flour mixed with salt and baking powder. Add nuts. Mix well and bake in well greased bread pans. Bake at 350 degrees for 1 hour. Invert on rack and let cool.

Rind from 4 lg. oranges
1 c. sugar
1/2 c. hot water
1/2 c. sugar
6 tbsp. shortening
1 c. milk
4 c. flour
3 tsp. baking powder
1 tsp. salt
1 c. nuts
2 eggs

DIRECTIONS:

Peel oranges and cover rinds only with hot water; boil until tender; drain. Remove white membrane; cut rind into narrow strips and drop into syrup made by boiling 1 cup sugar and 1/2 cup water until it spins a thread. Cook slowly 5 minutes, drain, save syrup to glaze bread.
