Orange Nut Bread (Low Sugar)

INGREDIENTS:

2 1/2 c. flour
2 tbsp. sugar
1/3 c. Sugar Twin
3 1/2 tsp. baking powder
1 tsp. salt
3 tbsp. salad oil
1 egg
1/2 c. milk
3/4 c. orange juice
1 c. chopped nuts

DIRECTIONS:

Measure all ingredients into a large mixer bowl. Mix for 1/2 minute, scraping sides and bottom constantly. Fold in nuts. Pour into a greased and floured 9×5x3 inch loaf pan. Bake at 350 degrees for 50 minutes, or until a wooden pick inserted in the center comes out clean.

Orange Date Nut Bread

INGREDIENTS:

1 orange
Boiling water
1 c. dates, cut up
2 tbsp. shortening, melted
1 tsp. vanilla
1 egg, beaten
2 c. flour
1/4 tsp. salt
1 tsp. baking powder
1/2 tsp. soda
3/4 c. sugar

DIRECTIONS:

Put unstrained orange juice from orange in cup. Add boiling water until it measures 1 cup. Pour in mixing bowl and add orange rind, dates, shortening, vanilla and egg. Sift dry ingredients; add nuts if you like. Place in greased pan. Bake at 325 degrees 1 hour and 10 minutes.

Cranberry - Orange Nut Bread

INGREDIENTS:

2 c. sifted flour
1/2 tsp. salt
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 c. sugar
1 c. pecans, chopped
1 c. raw cranberries, halved
1 egg, beaten
2 tbsp. shortening, melted
Hot water
Juice and grated rind of 1 orange

DIRECTIONS:

Sift together dry ingredients. To juice and rind of orange add shortening and boiling water to make 3/4 cup liquid. Add egg to dry ingredients. Add liquid, nuts, and cranberries. Stir well. Pour into greased and floured loaf pan. Bake 1 hour at 375 degrees (check after 50 minutes).
