Banana Walnut Snack Cake

INGREDIENTS:

1 pk Snack Cake Mix

1 Egg

1/3 c Vegetable oil

1/2 c Ripe banana; mashed

1/2 c Buttermilk; milk or water

1/2 c Walnuts; chopped

DIRECTIONS:

Preheat oven to 350. Pour Snack Cake mix into an ungreased 8 or 9 ” square baking pan . In a small bowl, combine remaining ingredients, beating with a fork to blend. Stir into Snack Cake mix until blended. Bake 30-35 minutes in preheated oven until wooden pick inserted in center, comes out clean. Cool on Rack. 9 serv.

Apricot-Banana Nut Bread

2/3 c brown sugar

1 egg
1 c very ripe banana pulp
1/2 c apricot butter (or jam)
1 3/4 c white flour
2 1/4 ts baking powder
1/2 c chopped walnuts

A while ago, I added apricot butter to my usual banana nut bread. I also
used apricot jam – the chunks of apricot in the jam added a nice texture.
The results were great!

Best to have all ingredients at room temperature. Cream butter and sugar.
Add egg, lemon zest, banana and apricot butter. Sift flour and baking
powder together. Fold flour mixture gradually into the wet ingredients. Mix
in walnuts. Pour batter into a bread pan, and bake for about 1 hour at 350
degrees Farenheit.

DIRECTIONS:

Preheat oven to 300 degrees. Spray 12-muffin tin with no-stick cooking spray. Mash bananas in a medium mixing bowl. Add sugar, brown sugar and eggs. Mix well. Add butter. Stir in flour, whole wheat flour and soda. Add buttermilk and walnuts. Mix until just moistened. Spoon into muffin tin. Bake until muffins are brown and done, about 20 minutes.
