Roasted Garlic Bread

Take a bulb of garlic and peel away a couple layers of the paperlike skin. Slice off a bit of the top. Heat oven to 450°F. Place bulb on large piece of foil and pour on a tablespoon or so of olive oil. Fold foil around bulb and back for 30 minutes. Take out and let cool. Take softened cloves and mash.

For 1 1/2 lb loaf:

2 Tbls. mashed garlic cloves
1 cup + 2 Tbls. water
1 Tbls olive oil
3 cups bread flour
2 tbls sugar
1 tsp. salt
1 1/2 tsp. bread machine yeast

Place all ingredients except roasted garlic in bread machine in order listed. Use the basic/white cycle. At fruit/nut beep add mashed garlic plus a small amount of olive oil to make the dough smooth.

I have found that the dough is rather dry until the garlic is added, and I have had to add a small amount more olive oil to get the right consistency.
