Oatmeal Banana Nut Bread
INGREDIENTS:
1/2 c. shortening
1 c. sugar
2 eggs
1 c. mashed bananas
1 1/2 c. sifted flour
1 tsp. soda
1/4 tsp. salt
1/2 c. quick oats
3/4 c. pecans, chopped
1 tsp. vanilla
1 tsp. butter flavoring
DIRECTIONS:
Cream shortening and sugar well. Add eggs, one at a time, mixing thoroughly after each addition. Add bananas and mix well. Sift flour, soda and salt. Add with oats to creamed mixture. Stir in nuts and flavoring Pour batter into greased 9″x5″ loaf pan and bake at 350 degrees for 50 to 55 minutes or until an inserted toothpick comes out clean. Or makes approximately 24 muffins bake at 350 degrees for 20 to 25 minutes.
