Fried Corn Bread

INGREDIENTS:

1 c. cornmeal
1 egg
2 tbsp. flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. soda
1 c. buttermilk

DIRECTIONS:

Mix all ingredients together. Mix well. Fry until golden brown on each side in small amount of oil. If using self-rising meal omit the salt and baking powder.

FLUFFY HUSH PUPPIES:

Add medium onion, chopped, to mixture above. Cut buttermilk to 3/4 cup. Deep fry. Drop by teaspoonful.

Sour Cream Corn Bread

INGREDIENTS:

1 c. self rising corn meal
1/2 c. small sour cream
1 sm. can cream style corn
3 eggs
Little sugar and salt to taste

DIRECTIONS:

Mix corn meal and eggs; add corn and mix. Add sour cream, salt and sugar and mix. Put in greased casserole or bread pan and cook until done, approximately 20 to 25 minutes at 350 degrees. NOTE: More sour cream can be added according to taste.

Mexican Corn Bread

INGREDIENTS:

1 c. corn meal
1/4 c. flour
1/2 tsp. soda
3/4 tsp. salt
1 chopped onion
1/4 lb. cheese
1 c. buttermilk
2 eggs
12 oz. can cream style corn
2 chopped jalapeno peppers
1 lb. hamburger meat

DIRECTIONS:

Mix all above ingredients. Meanwhile cook hamburger meat until done and grate the cheese. Put a layer of corn bread mix on bottom of well greased pan. Next put hamburger meat over this mixture and spread grated cheese over meat. After this add the remainder of corn bread mix on top. Cook about 40 minutes at 400 degrees or until done.
