Perfect Corn Bread

INGREDIENTS:

1 c. sifted all purpose flour
1/4 c. sugar
4 tsp. baking powder
3/4 tsp. salt
1 c. cornmeal
2 eggs
1 c. milk
1/4 c. vegetable oil

DIRECTIONS:

Combine flour, sugar, baking powder and salt. Stir in cornmeal, add eggs, milk and shortening. Beat until smooth (do not over beat). Pour into greased and heated 9″x9″x2″ baking pan. Bake at 425 degrees for 20 to 25 minutes.

Old Fashioned Corn Bread

INGREDIENTS:

1 c. flour
3/4 c. meal
3 tsp. baking powder
1 tsp. salt
1 tsp. sugar
1 egg
1 c. milk
2 tbsp. shortening

DIRECTIONS:

Bake at 350 degrees until golden brown.

Mixed Grain Corn Bread

INGREDIENTS:

1 1/3 c. yellow cornmeal
2/3 c. whole wheat flour
1/4 c. wheat germ
2 tbsp. sesame seed
1 egg
2 tbsp. soy grits (optional)
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/4 c. cooking oil
2 c. buttermilk

DIRECTIONS:

Stir together cornmeal, flour, wheat germ, sesame seed, soy grits, baking powder, baking soda, and salt. Beat together egg and cooking oil; add buttermilk. Stir buttermilk mixture into dry ingredients, blending until moistened. Turn into one greased 9×9x2 inch cast iron skillet. Bake in oven for 25 minutes at 400 degrees.
