Zucchini Fruit Bread

INGREDIENTS:

3 eggs
1 c. salad oil
2 c. granulated sugar
2 c. zucchini, peeled and grated
1 tbsp. vanilla
3 c. flour, sifted
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
2 tsp. cinnamon
1 c. walnuts, chopped
1 1/2 c. mixed fruit, candied, like in fruitcake

DIRECTIONS:

Beat eggs until light and foamy. Add the oil, sugar, zucchini and vanilla. Mix lightly, but well. Combine flour, salt, baking soda, baking powder, cinnamon and the mixed fruit and add to the egg mixture. Mix until blended. Pour into two 9 x 5 x 2 inch pans that have been greased and floured. Bake at 325 degrees for 1 hour. Remove from the pans and cool.
