INGREDIENTS:
1/2 c. butter
1 c. firmly packed brown sugar
1 egg
1 tsp. vanilla
1 1/4 c. flour
3/4 c. whole wheat flour
2 1/2 tsp. baking powder
1/2 tsp. salt
3/4 tsp. cinnamon
1/2 tsp. nutmeg
1/8 tsp. cloves
1 1/4 c. ripe banana
2 tbsp. milk
1/4 c. chopped nuts
DIRECTIONS:
Put butter and sugar in large bowl. Mix well, add egg and vanilla. Mix until light and fluffy. Blend flours and remaining dry ingredients. Add alternately with bananas and milk. Spoon into greased loaf pan. Sprinkle top with nuts. Press lightly into batter. Bake at 350 degrees for 55 to 60 minutes. Cool, remove from pan. If allowed to age, flavors blend. Yield: one loaf.
