INGREDIENTS:
1 c. yellow cornmeal
2 tsp. baking powder
1/2 tsp. salt
1 1/4 c. boiling water
3/4 c. milk
4 tbsp. melted butter
3 eggs, well beaten
DIRECTIONS:
Mix together dry ingredients. Add boiling water and stir until smooth and free of lumps. Add milk and melted butter. Fold well-beaten eggs slowly into buttered baking dish. Bake in moderate oven (350 degrees) for 45 minutes. Serve at once from baking dish with plenty of butter. Serves 6.
SPOON BREAD PUDDING:
Add 3/4 cup sugar, 1 cup moist raisins dredged in flour and 1 teaspoon vanilla. Bake as above and serve with heavy cream.
