INGREDIENTS:

 5 zucchini, sliced
1 lg. onion, sliced
1 lg. pkg. sausage, mild or hot
1 c. grated cheese
2 pkgs. corn muffin mix

DIRECTIONS:

Saute zucchini and onion. Arrange in 9 x 12 inch greased casserole. Sprinkle with grated cheese. Brown sausage, pour off fat. Spread evenly over vegetables and cheese. Mix corn bread per package directions. Pour over sausage, cheese and vegetable mix. Bake at 350 degrees for 35 minutes or until lightly browned. Cool slightly, cut into serving size pieces.
