Fruit Loaf (Banana Bread)

INGREDIENTS:

2/3 c. sugar
1/3 c. soft shortening
2 eggs
3 tbsp. sour or buttermilk
1 c. fruit (mashed banana, grated apple, etc.)
2 c. sifted flour
1 tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt
1/2 c. nuts (if desired)

DIRECTIONS:

Mix thoroughly sugar, shortening and eggs. Stir in milk and fruit. Sift together dry ingredients. Add to sugar mixture. Add nuts. Pour into well greased 9×5x3 loaf pan. Let stand 20 minutes. Bake 350 degrees, 50-60 minutes or until tests done.
