INGREDIENTS:
3/4 lb. or 12 oz. Feta cheese
1/3 - 1/2 c. soft butter, low cholesterol, low salt
1 pkg. 24 count frozen dinner rolls
DIRECTIONS:
Defrost dinner rolls to a temperature just before the rolls begin to rise; they should not be cold to the touch. (As a quick method, place frozen rolls in microwave and defrost 1 1/2 minutes. DO NOT OVER DEFROST.)
Preheat oven to 375 degrees. Lightly grease 3 cookie sheets. Crumble cheese in a mixing bowl. Add butter and blend with mixer to coarse, creamy consistency. Set aside.
Take two defrosted rolls and place together (like bread on a sandwich). Roll the “sandwiched” roll on a well floured surface until about the size of your palm and open fingers. Place on greased cookie sheets. Using a fork, spread cheese mixture over the entire surface of the flattened rolls.
Bake in preheated oven for 10 to 12 minutes. Do not over cook as they will be tough. Serves 4 to 5. Serve with hot tea and fresh fruit or fruit salad for breakfast.
NOTE: If all are not eaten, place in a plastic bag in the refrigerator. Best reheated in toaster with tray, turning once during the warming process.
