INGREDIENTS:
2 med. zucchini
Salt
2 oz. cream cheese
2 tomatoes, peeled, seeded & chopped
1 oz. chopped green olives
1 oz. chopped black olives
2 minced green onions
2 oz. bread crumbs
Thyme, parsley, salt and pepper
Pimento strips
DIRECTIONS:
Slice zucchini 1/4 inch thick. Place in a small bowl with salt and let stand 30 minutes. Beat cream cheese with wooden spoon. Add remaining ingredients except zucchini and pimento. Season to taste.
Just before serving, rinse zucchini and dry slices thoroughly. Mound a small spoonful of cheese mixture on each slice and criss-cross with a strip of pimento.
