INGREDIENTS:
2 c. flour
1 c. sugar
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1/4 c. butter
1 egg, beaten
1 tsp. grated orange peel
3/4 c. orange juice
1 1/2 c. light raisins (opt.)
1 1/2 c. fresh or frozen cranberries, chopped
DIRECTIONS:
Sift the first 5 dry ingredients together. Cut in butter until crumbly. Add egg, orange peel and juice all at once. Fold in raisins and cranberries. You may substitute cranberries for the raisins for an all cranberry bread. Pour batter into a greased 9″x5″x3″ loaf pan. Bake at 350 degrees for 1 hour and 10 minutes.
