Basic Sour Dough Batter

INGREDIENTS AND DIRECTIONS:

Basic batter (also called sponge) is set the evening before you want sourdough for pancakes or other baked products made from sour dough.
Put 1 cup starter in a large mixing bowl (glass or ceramic), do not use metal or plastic.

Add:
2 c. warm water
2 1/2 c. flour
Mix. Mixture will be thick and lumpy but it will thin down with fermenting.
Cover bowl and let sit in a warm place overnight, top of refrigerator works good.
IMPORTANT: In the morning put 1 cup of starter in starter pot and keep in the refrigerator until next time. The rest of the batter is now ready to be combined with other ingredients to make pancakes, bread and etc.
