INGREDIENTS:
1 c. sugar
1 1/2 c. mashed bananas
2 eggs
2 c. flour
1/2 tsp. salt
1/2 c. butter
1 tbsp. lemon juice
1 c. chopped nuts
3/4 c. candied fruit
3 tsp. baking powder
DIRECTIONS:
Cream sugar and butter until fluffy with hands or spoon. Add eggs, one at a time, beating after each. Stir in 1 1/3 cup banana and lemon juice. Sift together flour, salt and baking powder. To flour mixture, add nuts and fruit. Lightly coat, then combine with sugar mixture and blend well. Pour into 9×5x3 inch pan; bake 1 hour or until golden brown at 275 degrees. Slice thin and moist for wonderful holiday sandwiches.
