INGREDIENTS:
BANANA BREAD:
1 c. sugar
1/4 c. shortening
1 egg
3 bananas
1 tbsp. baking soda
1/2 tsp. salt
2 c. flour
1/4 c. nutmeats
DIRECTIONS:
Cream sugar and shortening in mixing bowl. Beat until light and fluffy. Add and mix after each addition the egg and bananas. Combine baking soda, salt and flour in a separate bowl and then stir into the banana mixture. Add nutmeats. Do not over mix. Bake in greased loaf pan at 350 degrees for 45 minutes to 1 hour. Check for doneness. Makes 2 medium sized loaves.
BROWN SUGAR SAUCE INGREDIENTS:
1 1/2 c. brown sugar
2/3 c. corn syrup
4 tbsp. butter
Dash of salt
2/3 c. heavy cream
DIRECTIONS:
In a saucepan over medium heat combine brown sugar, corn syrup, butter and salt. Heat to a boil, then cool. Stir in heavy cream until smooth.
FRENCH TOAST BATTER INGREDIENTS:
3 eggs
4 c. milk
2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. vanilla
DIRECTIONS:
Beat together ingredients in a bowl.
Slice banana bread and dip into French Toast Batter and drop into a lightly oiled cast iron skillet (heated to 350 degrees). Cook until golden brown on each side. Place in a 200 degree oven on an oven proof platter to hold. Serve by placing finished French Toast on plate, drizzle Brown Sugar Sauce over the breads and garnish with banana slices. Goes well with bacon and home fries.
