INGREDIENTS:
1 c. sugar
1 stick butter
2 eggs
3 tbsp. buttermilk
1 tsp. vanilla extract
1 tsp. rum extract
Pineapple cream cheese
2 over ripe bananas, mashed
1 tsp. baking soda
2 c. flour
1 c. broken walnuts
1 c. chopped dates
DIRECTIONS:
Combine all ingredients except cream cheese in order as listed. Bake in floured and greased loaf pan(s) at 350 degrees for 1 hour. Cool. Cut and spread with cream cheese (if not bought pre-mixed, mix crushed, drained pineapple with softened cream cheese). Serve immediately or cover and refrigerate until served. Goes well with fruit salads as a bunch or as snacks or appeteasers.
