INGREDIENTS:
1 lb. ground beef
1/4 c. chopped onion
2 tbsp. chopped jalapenos
2 eggs, beaten
1 (1 lb.) can cream style corn
2/3 c. milk
1 env. (6 1/2 oz.) corn bread mix
4 slices American cheese
DIRECTIONS:
Preheat oven to 425 degrees. Brown ground beef until crumbly. Drain. Add onions and jalapenos. Combine eggs, 1 cup corn and milk and add to corn bread mix. Stir just until dry ingredients are moistened. Pour 1/2 corn bread batter into greased 9″ square cake pan. Top with beef mixture, cheese slices and remaining corn. Pour other half of corn bread batter on top. Bake for 25 to 30 minutes. 6 servings.
