Luscious Bread Pudding

INGREDIENTS:

Top this bread pudding with whipped cream or serve plain.

1 qt. milk

Heat until bubbly.

2 eggs, beaten
1/2 c. sugar
1/2 c. seedless raisins
1 tsp. vanilla
1 tsp. lemon extract or grated lemon peel
1/4 tsp. salt
2 c. stale bread cubes

DIRECTIONS:

Oven at 350 degrees. Bake 45 minutes. Serves 6 or more.
In saucepan heat milk until hot and bubbly. Meanwhile, combine eggs, sugar, raisins, vanilla, lemon and salt. Add to milk, mixing well. Pour mixture into buttered baking dish (two quart). Add bread cubes. Place dish in a large pan containing hot water. Bake. Cool on wire rack, chill.
