INGREDIENTS:
4 boxes Jiffy Corn Bread mix
1 tsp. salt
4 eggs
1 lg. can evaporated milk
3 tbsp. oil
1 c. water
1 can (lg.) whole kernel corn
3 sm. onions
3 med. green peppers
1 pimento
1 jalapeno pepper
1/2 lb. Cheddar cheese
2 lbs. ground chuck
DIRECTIONS:
Chop onions, peppers, saute with 2 pounds ground chuck. Sprinkle with a little garlic and salt. Set aside. Mix corn bread, drained corn and add to mix. Two tablespoons oil in pan and add corn bread mix and spread meat mix evenly over corn bread mix. Then put grated cheese over meat mixture. Bake about 1 hour at 350 degrees.
