INGREDIENTS:
1 c. sugar
3 ripe bananas, mashed
1/4 c. liquid shortening
2 c. flour
1 tsp. baking soda
1 tsp. salt
Nuts, chopped (optional)
DIRECTIONS:
Mix sugar, bananas and shortening together. In a separate bowl, sift flour, baking soda and salt. Add dry ingredients to moist and stir well, but do not beat. Stir in nuts, if desired. Pour into greased loaf pan. Bake for 1 hour at 350 degrees if using a metal pan and 1 hour at 325 degrees if using a glass dish.
PUMPKIN BREAD:
Use above recipe, substituting 1 (15 oz.) can pumpkin and spices as recommended on label for pumpkin pie, in place of bananas.
CRANBERRY BREAD:
Use above recipe, substituting 1 1/2 cup cranberry relish for bananas.
