INGREDIENTS:
2 tsps. unsalted butter
1/4 cup Onions, chopped
1 lb. zucchini\cooked, cut into 1/2 inch dice
1/2 tsp. salt (optional), or to taste
1 cup creamed corn
2 Tbsps. canned green chilies, diced
1/2 cup small curd cottage cheese
DIRECTIONS:
Melt butter in a heavy nonstick skillet over medium heat. Sauté onion 3-5 minutes or until golden. Add zucchini, salt and pepper to taste. Cover skillet and cook 3-5 minutes, stirring frequently. Stir in corn and green chilies. Cook uncovered 2 minutes, stirring frequently until corn is tender. Stir in cottage cheese. Simmer 1 minute, stirring frequently until vegetables are covered with cheese.
