Cracklin’ Bread

INGREDIENTS:

1/2 c Diced pork fat
1 c Cornmeal
1 c Flour
1 ts Baking soda
1/2 ts Salt
1 c Buttermilk
2 Eggs; beaten

DIRECTIONS:

Fry pork in a large iron skillet till very crisp; not burned. Set aside. Combine cornmeal, flour, soda, and salt in a mixing bowl. Gradually blend in milk, eggs, 2 TBSP of pork drippings, and the cracklings. Pour batter into the iron skillet. Bake in 425F. oven 15-20 minutes.
