Chicken and Corn Frittata

INGREDIENTS:

1 Tbsp. butter
1 medium onion\cooked, finely chopped
1 clove garlic, crushed
9 oz. boneless, skinless chicken breasts, sliced
6 eggs
5 oz. corn kernels, drained
1 Tbsp. plus 1 tsp. parsley, finely chopped

DIRECTIONS:

Preheat oven to temperature 375°F. Heat margarine over a moderate heat in a heavy based pan. Cook onion and garlic until soft. Add the chicken and cook, stirring, until chicken is cooked through. Place the chicken mixture into a greased 8 inch pie plate. Beat the eggs lightly with the corn and parsley. Pour over chicken. Bake for 15 minutes, or until set. Serve with a green salad or steamed green vegetables.
