BROCCOLI CORN BREAD

INGREDIENTS:

1 (10 oz.) pkg. frozen chopped broccoli, thawed and drained
2 tbsp. chopped onion
1 (6 oz.) carton sm. curd cottage cheese
1 stick butter, melted
4 eggs, beaten
1 (8 1/2 oz.) box Jiffy corn bread mix

DIRECTIONS:

Mix broccoli, onion, cottage cheese, melted butter and eggs. Add corn bread mix. Pour into a greased 13 x 9 x 2 inch pan. Bake at 400 degrees for 20 to 25 minutes. Makes 12 squares. VARIATION: For a corn bread that is not sweet, substitute two 6 ounce packages Morrison’s Corn Kits.
