INGREDIENTS:
1 qt. milk
2 c. fine bread crumbs
4 eggs
2 tbsp. melted butter
Nutmeg to taste
1/4 tsp. soda
DIRECTIONS:
Pudding Sauce: Cream together butter and sugar (half as much of the former as the latter) and when smooth and white add the beaten yolk of an egg and the juice of a lemon.
Bread crumbs always stale and dry. Dissolve soda in hot water, beat the yolks lightly and having soaked the bread crumbs well in the milk, stir these together, then the butter and seasoning with the soda, lastly the whites. Bake to a fine brown and eat hot with pudding sauce.
This, if well mixed and baked, is quite a different dish from the traditional and much despised bread pudding. Try the sauce. (You may boil this pudding, if you like, in a floured cloth or a buttered mold.)
