INGREDIENTS:
1 lb. can creamed corn
1-1/2 cups golden round crackers, crushed
1 large egg
2 Tbsps. unsalted butter, melted
DIRECTIONS:
Preheat oven to temperature 350°F. Spray a 9 inch baking pan with nonstick cooking spray. Combine first 3 ingredients and half the melted butter in a bowl. Mix thoroughly. Transfer to prepared pan. Brush or drizzle remaining butter over top. Bake 25-30 minutes or until top is golden brown. For a variation add 1/8 cup shredded cheddar cheese on top in the last 2 minutes of baking or add finely chopped ham mixed in with corn mixture and top with cheese.
