INGREDIENTS:
1 3/4 cup flour
2/3 cup sugar
1 teaspoon ground cinnamon
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 stick butter or margarine
2 very ripe medium bananas, mashed
2 eggs, beaten
1/2 cup chopped pecans or walnuts, optional
DIRECTIONS:
Grease and flour a loaf pan.
Mix flour and next 5 ingredients. Cut in butter or margarine until mixture resembles coarse crumbs. Stir in bananas, eggs, and nuts; mix just until flour is moistened.
Spoon into prepared loaf pan, smoothing surface. Bake at 350 for 55 minutes or until a toothpick inserted in center of bread comes out clean. Cool in bread pan for 10 minutes.
Remove from bread pan and finish cooling on rack.
Notes: 3/4 cup chocolate chips can be added, if desired. 1 1/2 Tbs. nuts may be sprinkled on bread before baking for garnish.
