Banana Cake Or Bread

INGREDIENTS:

1/2 c. shortening
1 c. sugar
2 eggs
3/4 c. mashed ripe bananas (or more)
1 1/4 c. sifted flour (for bread, add a little more flour)
1 tsp. soda
1/2 tsp. salt
2/3 c. walnuts (optional)

DIRECTIONS:

Cream shortening and sugar until light. Add one egg at a time, beat well after each addition. Stir in bananas. Sift together flour, soda and salt, add to banana mixture. Mix just until blended. Pour into greased 9×9x2 inch pan for cake or 2 small loaf pans for bread. Bake in moderate 350 degrees oven for 35 to 40 minutes. Cool before cutting. For 9×13 inch cake pan, double the recipe.
