Banana Bread with Buttermilk & Meringue Recipe

INGREDIENTS:

1 cup margarine
2 1/2 cups sugar
1 1/2 teaspoon baking soda
3 cups sifted flour
1 teaspoon salt
4 egg yolks, beaten
6 tablespoons buttermilk
2 teaspoons vanilla
2 cups mashed ripe bananas
1 cup chopped nuts (optional)
4 egg whites, beaten

DIRECTIONS:

Cream margarine and sugar. Combine flour, salt, and baking soda; add to creamed mixture, alternating with egg yolks and buttermilk. Add vanilla, bananas, and nuts (optional). Fold in egg whites. Pour into greased loaf pans and bake at 325 degrees for 1 1/2 hours.
