Banana Bread V Recipe

INGREDIENTS:

1 cup sugar
1/2 cup salted butter (at room temperature)
2 eggs
3 mashed bananas (make sure they’re good and ripe!)
1 1/2 cup flour
1 teaspoon baking soda
3/4 cup nut meats - optional -
or
3/4 cup chocolate chips, since I prefer them to nuts (also optional)

DIRECTIONS:

Preheat oven to 350F. Grease (I use butter) and flour your glass loaf pan.

Cream sugar and butter together, then add eggs and mashed banana and mix well. Add your dry ingredients, mix until just incorporated. At this point, you may add your chocolate chips and/or nut meats. You don’t have to mix it to death - just until all the ingredients are well incorporated.

Place in prepared pan. You can sprinkle with a bit of granulated sugar if you want a bit of crunch. Bake 1 hour.

I place over-ripe bananas in a bag kept in the freezer. This way I do not waste bananas and I always have some available for this recipe. I leave them in the skin, which will turn black. I thaw them partially before mashing them. They will be very loose and wet, but that is just fine.

This recipe for Banana Bread V serves/makes 1 loaf.
