Banana and Coconut Curry Pisang kerrie dengan klappa

INGREDIENTS:

4 tbsp dessicated coconut
1 tbsp groundnut oil
1 medium size chopped onion
1 very finely chopped garlic clove
2 tsp Java curry powder
2 tsp sambal ulek
4 firm bananas
1 cup thick coconut milk
1 tsp salt
2 tsp soft brown sugar

DIRECTIONS:

Roast the dessicated coconut in a dry frying pan, turning over constantly until lightly colored. Pour on to a large plate to cool.
Heat the oil in a wok and stir fry the onion until transparent. Add the garlic, curry powder and sambal ulek. Stir thoroughly.
Peel the bananas and cut into 4 cm pieces. Add to the wok and stir carefully. Add the coconut milk, salt and sugar, stir gently and simmer for 5 minutes.
