Amaretto Bread Pudding

INGREDIENTS:

3 c. broken French bread slices
Vegetable cooking spray
2 c. skim milk
1/3 c. firmly packed brown sugar
1/4 c. sliced natural almonds
1 tbsp. + 1 1/2 tsp. Amaretto
1/4 tsp. almond extract
3 eggs, beaten

VANILLA CREAM SAUCE:

3 tbsp. sugar
2 tbsp. + 1/2 tsp. cornstarch
2 1/4 c. skim milk
1 1/2 tsp. vanilla extract

DIRECTIONS:

Place bread pieces in a 9″ square baking pan that has been coated with cooking spray. Combine skim milk and remaining ingredients, stirring well with a wire whisk. Pour milk mixture over bread pieces. Bake at 350 degrees for 50 minutes or until knife inserted in center comes out clean. Serve warm. Serves 6.

SAUCE: Combine first 3 ingredients in a medium saucepan, stirring well. Cook over medium heat stirring constantly until mixture comes to a boil; cook an additional 2 minutes. Remove from heat. Stir in vanilla. Cover and chill. Serve over pudding. (Also may be served over fresh or baked fruit or custards.)
